1 can (15 oz) chickpeas, drained and rinsed

2 medium sweet potatoes, cubed

2 cups Brussels sprouts, halved

1 large red onion, sliced

3 cloves garlic, minced

3 tablespoons olive oil

1 tablespoon maple syrup

1 teaspoon smoked paprika

1 teaspoon fresh rosemary, chopped

1 teaspoon thyme leaves

Salt and black pepper to taste

Optional garnish: pomegranate seeds, chopped parsley

Instructions

  1. Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.

  2. In a large bowl, combine chickpeas, sweet potatoes, Brussels sprouts, red onion, and garlic.

  3. Drizzle with olive oil and maple syrup. Add smoked paprika, rosemary, thyme, salt, and pepper. Toss to coat evenly.

  4. Spread everything onto the prepared baking sheet in a single layer.

  5. Roast for 30–35 minutes, stirring halfway through, until vegetables are golden and tender.

  6. Taste and adjust seasoning if needed.

  7. Transfer to a serving platter and sprinkle with pomegranate seeds or parsley for a festive touch.
